And I recently found out, through an innocuous tv show on food followed by a little research, that commercially made bread is being fortified with extra folate, as of September just gone. Here in Australia anyway; seems like NZ is managing to put it off for the moment pending further investigation.
Smart.
The risks of extra folate to the general, non-pregnant population appear to be unknown.
Hellooooo, is anyone actually out there, in decision-making-for-the-entire-population land???
So, get to making your own if you can....the recipe for this is here.

And it can be made with wheat flour just as easily as spelt, no adjustment required.

I agree. Sometimes bread gets a rap for being 'too hard' to make, but once you get into a routine, no bigger I reckon, AND, you know what you put in it. I have some baking right now, for tomorrows school lunches.
I've just put some on too, for daycare lunches tomorrow :)
I don't make the bread regularly but do make all our bread rolls, crackers and biscuits. My kids, blondie especially, are not fond of sandwiches for school lunches (neither was I!! I remember hiding in the toilet at home to flush them before Mum found them in my lunchbox!) - so we make lots of fruit muffins instead.
..I'm actually thinking about buying Love Chunks a breadmaker for Christmas. It'd look perfect next to his first love, Mrs Krups the Coffee Machine.
Wow Louisa, you make bread rolls, crackers and biscuits? Hell, I feel virtuous if I remember to take the saladas OUT of the packet first....
